Chocolate salad for breakfast

What?
Did you say salad for breakfast? No, wait.. did you say "chocolate salad"?

Yes. I couldn't resist on trying this super strange and funny looking salad for a breakie today. I think that in the future I'll have my choco mousse as a choco mousse and salad as a salad, but in all it's oddness this was well worth trying out. The recipe is from Choosing Raw -blog. I realized (too late) that all the sauce was probably not meant for a single portion, hehe. So I got more than enough of a chocolate kick :)

Raw challenge day eleven

Didn't have a pear this morning. Used banana instead. Also didn't feel like having a smoothie - so I used a bit less water. And found the best breakfast porridge! Ok, one of them. All have been so yummy!

Lovely morning
a handful of spinach
two handfuls of lingonberries
one banana
2-3 dried figs (soaked)
2-3 dried dates (soaked)
dried acai berries (soaked)

Maybe my head is spinning, but for me this tasted pretty chocolatey :) Added some mulberries on top. And here you have my lunch salad. Note the honey falling down, hehe. I have such an eager and talented photographer, who's unfortunately not always present when taking these pics (as you can see the difference in this post). Hope you guys don't mind!

Raw challenge day four

So far I've had the best and the worst taste experiences with this challenge. I kinda ruined the melon smoothie the other day and yesterday's papaya smoothie.. let's not even go there. Then again, some foods have been out of this world delicious, like todays breakfast porridge. That was more like a dessert and I enjoyed every single bit of it! Afternoon snack was raw chocolate mousse, and you can never go wrong with that :) Also the "sushi" that I had as a dinner was yummy.

Yummy porridge:
3 dried plums
3 dried dates
2 dried figs
2 tbsp goji berries
2 tbsp dried cherries
1 dl buckwheat
100g blueberries
banana

Soak everything except blueberries and banana overnight. Don't use the soaking water of buckwheat, do use the needed amount of soaking water of the fruit. Blend everything and add some cuties on top. I used almond flakes, coconut flakes and raisins.

Chocolate mousse:
1 avocado
3 soaked dates (use the water)
3 tbsp raw cocoa powder
honey
vanilla

Blend and enjoy! I added some mulberries and cashews on top.

Good raw morning!

Thinking about having "just a green smoothie" for breakfast doesn't sound that tempting. Nor filling. But just take a wild guess how this was, yes, both tasty and very filling (yes, the portion is also huge). Think of it as a combined bread with veggies and a fruit salad :) Just that it is all pure, natural and in a form that is easy for your body to digest and to absorb all the nutrients. You know, that after a night of "fasting", the body is like a dry sponge. It is happily looking forward to efficiently use all the things you give it in the morning. So while a french breakfast with white bread and nutella might sound awesome, it's not the best choice. At least not every morning :)

You also must know people that skip breakfast in an attempt to lose some weight. Or maybe it's just a habit not to eat. Or maybe your body just does not take in anything (or it feels like it). But the truth is, that you should eat something within the first 1-2 hours you are awake. This sends the body a message, that it is time to wake up, start to burn the fuel that it is given and to function in all the magnificient ways it does. Not having breakfast tells something more like "Gosh, dude, it seems we are NOT having any fuel today! It's not yet for certain, BUT we better now start to hold on to the fats, just in case. And let's also start to slow down all the preparing work; inflammation curing, diseace protection and cell renewal."

So if you happen to be one of those breakie-skipping-folks, maybe you could start tomorrow by having a glass of juice. Or blend a small smoothie with juice, yogurt and fruits/berries. Think about that you are doing your body a huge favor.

Favorite breakfast

Every other morning I feel like I have found the best breakfast in the world and this is the thing I'll have for the rest of my life :) This one is just too fab to be true - and very good for you! Green smoothie has baby spinach, celery and a banana in it. On the two pieces of organic oat bread I have regular butter and peanut butter. Now hop on the bike and off to the gym before work. The morning outside seems to be so beautiful, the sun just rising up..

Green smoothie, walnut bread with butter and happiness-flavoured black tea <3

This breakfast felt so good after a great girls' night in. The green smoothie had banana, pear and parsley in it and tasted awesome!

Cheer me up breakfast

You know those mornings, when you need a little something extra? When the world you live in just seems to be a bit too tough and unfair.. Pancakes cannot make it all better, but it's almost like the warm hug you need to get the day started.

Spelt-buckwheat pancakes with banana and agave syrup. Banana-blueberry smoothie.

Spelt pancakes (today's recipe)
1 egg
1,5 dl oat milk
1 dl whole grain spelt flour
1 dl buckwheat flour
touch of salt
real butter for frying

ps. was still a bit sleepy when making these.. so the amounts are very much approximate..

Saturday breakfast

Banana-lingonberry-smoothie, organic rye bread with peanut butter and banana.

ps. who would have thought rye bread and peanut butter are a perfect match?? The non-existance of regular butter led me into making this invention! And also, seems to be that after a year of being rye bread banned (snif..) I can finally eat rye bread as long as it is organic! Super!

Rainy day breakfast

Rainy day - blurry photo :)

Yogi tea (pure) - this morning's "wisdom" was: with understanding comes love. I kinda feel it's the other way around, but better not to argue with yogi tea.
Oat-walnut-bread (with butter and cheese) - so in love with it! I'm only gonna bake nut-breads from now on.
Banana-blueberry-smoothie: half a banana, half a bag of frozen blueberries and some oat milk.

Sunny Sunday morning

Blueberry-banana-smoothie, bread with butter and tea.
Note to self: if you bake your bread using buckwheat, trying to cut it into slices very likely ends up looking like this, hihi. Taste was great anyways!

Raw banana porridge

My absolute favorite raw breakfast. Banana porridge with black currants. So simple and so good!

Raw banana porridge
1 dl almonds (soaked overnight)
1 dl sesame seeds / barley grains (soaked overnight)
1 banana
1 tsp lucuma
(coconut oil)
plenty of cinnamon
water
a tiny bit salt

Just blend everything into a delicious porridge and pour it over the black currants. Oh, throw out the soaking water of almonds, but do use the other soaking water. Can't remember why that was, but that's just how we roll :)

Pears

This morning: fresh pears, quark (thinned with milk), cinnamon, honey, raisins and almonds. And tea.
Too bad I still usually remember the photo taking only when I'm half way thru my eating... It did look nicer before I mixed it all up..

Colors

I don't think good food exists without colors. I totally can eat a pasta with creamy cheese sauce if I feel like it, but seriously, food without colors means almost no nutrients, that are essential for your health. Have you ever seen those "You Are What You Eat" shows? The moment when they reveal the table of food the person has been eating during one week - it's only no-colors: pasta, white bread, cookies, chocolate bars, fizzy drinks, sugar, coffee, meat, cheese, chips, sauces..

The little nutritionist inside of me immediately smiles, when they reveal the other table (usually causing a lot of gasping to the "patient"), including all fruits, veggies, whole wheat, milk, eggs, greens, berries, juices.. :)

So, here is a breakfast I had this morning. Love the colors. Loved the taste.

Oat meal bread with cheese, avocado and sweet pepper. Hot chocolate: soya milk, raw cocoa and honey.
