I'm in-between homes and last night was surely the last friends' evening in this home. I baked some lovely rolls and this (ugly) raw key lime pie. I found various recipes online, but ended up trying Katja's version. Made it a bit bigger, since we are quite many here to eat it :)
The appearance could have been better. A lot. I blame the organic vanilla extract that I used, that was dark brown. Hence, the entire frosting became sort of.. ugly color. Aaaaand the filling was way too soft to even do the frosting properly! But despite all - everyone enjoyed this pie. Even my very dear, but very raw-food-suspicious friend liked it! Actually she even took more! Whohooaa :)
Raw key lime pie
Crust
2 dl almonds (soaked)
0,75 dl sunflower seeds (soaked)
2 dl dates (soaked)
1,5 tbsp lucuma
2 tbsp coconut flakes
1,5 tsp vanilla
Filling
3 avocados
4 limes (juice)
1 lime peel (grated)
1,5 dl honey
1,5 tsp vanilla
2 tbsp lucuma
Frosting
1,5 dl cashews (soaked)
0,75 dl coconut oil
1,5 tsp vanilla
3 tbsp lucuma
water
Blend the crust stuff. Into the cake mold. Blend the filling stuff. On the crust. Blend the frosting stuff. On the top. Done.

Raw pecan liquorice fudge
Hi!! It has been aaaaages! Been away from this blog really for like decades, but it was nice to see, that there are still some visitors here. Hooray! Foodie love is not dead. It was just.. hibernating :)
I've had this massive "candy-sugar-muffins-chocolate-cake" period that I just seem to be unable to stop. So, now, for real, if the sweet-eating doesn't stop - it can continue! :) Let's just make a slight move into the more healthy variations. The raw variations.
This super simple recipe caught my eye in Saara's blog. Saara Aalto is an amazing, beautiful Finnish singer/songwriter talent, and also a friend of mine.

Raw salted pecan pie
This pie was such a hit. We ate it until the last crumb. And after that I basically licked the plate. And it was so easy to make as well!
The base:
1 cup dates
1/2 cup pecan nuts
1/2 cup almonds
The caramel:
2 tbsp coconut oil
2 tbsp raw nut butter (I used un-raw peanut butter)
2 tbsp lucuma powder
2 tbsp agave syrup
1/2 tsp sea salt
On top:
1/4 cup pecan nuts (chopped)
sprinkle sea salt
For the crust, mix the almonds and pecans in a food processor until finely chopped. Add the dates and process until done. Press the mixture on a serving plate or a cake tin lined with baking paper / cling film. Put into the freezer to cool and wait.
Make the caramel by melting the coconut oil in water bath and add other ingredients. Let it firm a bit before applying on top of the cake. Add the pecan bits and some sea salt.

Raw chocolate balls
I have been enjoying the freedom to eat what I feel like SO much after the raw two weeks. To be completely honest, I haven't even had any green smoothies or salads. Instead, we made the smashed potatoes, soya balls and lingonberry jam on Friday and.. I forgot to take a photo! It was soooooooooo gooooooood! Also, we made super good green curry yesterday and again.. no foto! I suck. I know.
Today I made these raw chocolate balls for Tuesday when I have the biggest happiness to get my dear friend back from Australia for Christmas. I have missed her so much! We are having a little glögi, pipari and torttu evening. And then it's only one more day at work before the long waited Christmas holiday! Yey!
Raw chocolate balls
1 dl raisins
1,5 dl almond flour
6-7 dates (soaked)
4-6 tbsp raw cocoa powder
1 tbsp honey
touch of salt
1 tbsp psyllium fiber
1 tsp vanilla
1 tps cinnamon
1 tbsp lucuma and tocotrienolis
Blend everything and make cute balls. Roll the balls finally in cocoa powder and palm sugar ( like I did here) or in coconut flakes. I used (too much) water blending the raisins and dates, which resulted in the final "dough" being waaaaay too wet. I ended up adding more and more and.. more and more the flours. The end result was pretty ok and I managed to cover up the muddy outlook nicely with the final powdering.

Raw orange chocolate cake
This cake is the real thing! Not for sissies. Not for those who prefer milk chocolate and coffee with heaps of sugar and milk. This cake is for serious flavor lovers who can handle the sweet avalanche of orange and chocolate with every bite.
Raw orange chocolate cake
Crust:
2 dl raisins
2 dl almond flour
2 tsp psyllium-fiber
2 tsp salt
2 tsp cinnamon
1 tsp coconut oil
2 dl almond flour
2 tsp psyllium-fiber

2 tsp cinnamon
1 tsp coconut oil
Blend everything into a smooth dough that sticks together. Start with raisins and almond flour, then adding the rest. This recipe makes a very small cake, so for a normal size - double it.
Filling:
3 small organic oranges (use the juice and the peel)
10 dates
2 dl raw cocoa flour
2 tsp vanilla
1 tbsp honey/agavea
1 dl coconut oil
5 tbsp cocoa butter (melted)
2 tbsp lucuma powder
2 tbsp toco powder
2 tbsp carob powder
a touch of salt
a bit of cinnamon
3 small organic oranges (use the juice and the peel)
10 dates
2 dl raw cocoa flour
2 tsp vanilla
1 tbsp honey/agavea
1 dl coconut oil
5 tbsp cocoa butter (melted)
2 tbsp lucuma powder
2 tbsp toco powder
2 tbsp carob powder
a touch of salt
a bit of cinnamon
Blend the orange juice (+shredded peel) with the dates. Add the other ingredients.Blend. Don't eat it all yet.
Let it stay in the fridge over night (if you have the patience) for the flavor to really come out.
PS. How hard would it be to write down the source for the recipe when you print it out? I really would like to give the credits to the person who has created these recipes (unless they are my own, of course). And MAN have I now tried to trace back this recipe - with no success. So, in case you are, or you know the person whose recipe this is, feel free to trace me back and kick my big ass. I'd appreciate it :)

Raw Mokkapala
Hey, mokkapala is such a concept in Finland, that translating feels a bit cruel. We have a pajamas party tomorrow at my friends place. Originally, I was supposed to make a decadent chocolate cake, but.. I couldn't! I seriously couldn't. I tried to write down the ingredients on a shopping list: 300g butter, 300g chocolate, 5dl sugar and then some white flour.. I started to feel nauseous. I mean, for sure I could have enjoyed a piece of it, but making such a thing.. I couldn't.
So in this little attempt of saving my friends from toxic overload, I decided to make raw "mocca brownies".
Raw Mokkapala
2 dl walnuts
1 dl almond flour
2 dl dried dates
1/2 dl coconut flakes
1/2 dl raw coconut powder
1 tbsp toco powder
frosting:
1/2 dl raw cocoa powder
1-2 tbsp lucuma powder
6 tbsp coconut oil
2-3 dried dates (soaked)
2 tbsp coffee
1 tbsp agave syrup
1 tsp vanilla essence
+ coconut flakes on top
Blend and blend.
Hih, I love the simplicity of raw recipes! A few notes: try to get organic coffee (I didn't, I used instant coffee from Lidl, haha) and also try to replace vanilla essence with something more natural, like vanilla extract.
Also, don't expect to get a full baking tray. I was kinda disappointed by the size, but I'm pretty sure the taste makes up for it. Or, you can always double the recipe ;)

Raw Apple Pie
This pie was the first raw pie I made last spring and this is still one of my favorites. Especially gorgeous when made using fresh domestic apples. I think even my friends liked it - or then they are just very good actors :) This recipe is for a normal size pie, this time I made only half.
Raw Apple Pie
Crust:
2 dl sunflower seeds
1 dl cashew nuts
1 dl brazil nuts
1 tbsp raw cocoa powder
2 dl raisins
3 dates
Filling:
5 apples
1 tbsp cinnamon
2 tbsp honey
2 tbsp lemon juice
Blend the ingredients for the crust. Blend the ingredients for the filling (apples do not need to go all smashed). Enjoy!

Raw Brownies
I have some friends coming over tomorrow and as I feel everyone in the world should get acquainted with raw goodies, I decided to make them some raw brownies and tomorrow a raw apple pie. These brownies would be just a perfect match with some raw ice cream!
Raw brownies
3 dl walnuts
3 dl dates
2 dl raw cocoa powder
1 dl coconut flakes
1/2 dl honey (or a bit less agave syrup)
a bit of salt
(cocoa nibs / mulberries / dried cranberries...)
Grind walnuts, blend everything together. Add last the extra ingredients you like. Voilà!

Tropical Cake
We went to eat lunch in Silvoplee (an amazing vegetarian / vegan / raw) restaurant in Hakaniemi. Last time I also got a piece of cake as a dessert take away - and boy, it costed 7 euros! The tiny (ok, well, quite a huge) bit! So this time I was also craving the cake, but instead of buying it, I made it :) And just guess if I measured anything while making it..
Tropical cake
The bottom:
Dried plums (soaked 1h)
Almond flour
Crunched almonds
Coconut flakes
Coconut oil (maybe just 1tbsp)
Filling:
Bananas
Mango (frozen of fresh, if available)
Pineapple
Lucuma powder
Topping:
Oat creme whipped
Coconut flakes
Vanilla essence / honey
(and bigger coconut flakes as decoration)
Blend the plums into a puree. Then just mix everything up. Spread the bottom and put it into a fridge to wait. Blend the bananas and half of the mangos into a puree, then mix in the rest of the mango, pineapple pieces and lucuma powder. Add the filling on top of the bottom.
Whip the oat creme, blend in the coconut flakes and vanilla essence or honey. Spread carefully on the cake and decorate with coconut flakes.
My warning goes: the cake is not exactly firm, it's a bit more like.. a pile of mousse. But - no complaints were heard of the structure, I guess the taste made up for it :)

Oh lord were these chocolates good or what?! I cannot describe. Each batch just came out even more heavenly than the previous one. I had a bunch of first timers around the table and I kinda feel they liked both the making and the eating.
The basic ingredients were coconut oil, cocoa butter, honey, cocoa powder, lucuma and salt (and cocoa nibs). We also used toco for the last batch and ginger syrup to the lemon ginger love.

Raw lingonberry apple pie
Raw lingonberry apple pie
(one very small pie)
The crust:
1 dl sun flower seeds
1/2 dl cashews
1/2 dl walnuts
1 tablespoon lucuma
1 tablespoon carob
a touch of salt
1 dl raisins
3 dates
1 tablespoon coconut oil
The filling:
2-3 dl lingonberries
1 small apple
1-2 tablespoon lucuma
2-3 tablespoons organic sweetener (like agave or such)
+ coconut flakes
If you have a good blender just throw all the crust ingredients in and blend. In my case, I had to grind all the nuts and seeds first in a mortar. Well, you gotta work for your sweets! I also soaked the dried dates and the raisins for a while before mixing them in. Form the crust on a plate and place it in the fridge.
Smash then the ingredients for the filling in the best way you see it happening. Add the sweetener or honey the amount you find fitting your taste buds best. This pie is not even supposed to be super sweet, just to point out.
Introduce the crust to the filling, let it stay a bit more in the fridge (if you have patience) finish with coconut flakes - and enjoy with love and warm tea <3

Raw rum raisin ice cream
Ok, I have always been a ben-n-jerry's kinda gal. Or maybe HäegenDazs. So if someone would have told me that there is a chance that a heavenly ice cream without sugar, fat or milk exists, I would have gotten a serious laugh attack. But then I found raw ice creams. Oh heavens. So good, I cannot describe!
Raw rum raisin ice cream
1 dl soaked cashew nuts
1 frozen banana
1 tbs lucuma
1 tbs honey
rum essence
raisins
Take the frozen banana bits out of the freezer 10 minutes before preparing this treat. Half of the raisins you might want to mix in the blender and add the other half before serving. If you want a silky smooth texture, grind the nuts before blending. I don't mind the chunks and bits. Just like with Ben&Jerry's :)

Raw chocolate!
Here it comes.. the chocolate. The first touch to raw food for many. Unless the thought of dark chocolate gives you goosebumps, I can guarantee, that this one will get you hooked for life. This is just one possibility, you can vary the recipe as much as you can imagine! Try different nuts, dried fruit, coconut, vanilla, raisins.. I once made almond mint chocolate and I swear I think I fell in love.
I'm sorry I have no measurements here, I just play by ear. If someone wants, I can try to measure next time. What you need to do, is to melt together the coconut oil and honey in water bath. Then mix in the flour. Sprinkle the "things" on a plate (plastic ones are good for this) and pour the hot chocolate over those. Or vice versa. Doesn't really matter, it all mixes up in the stomach :)

Raw choco mousse
I have been pretty stressed out the past week or so. And now it's also starting to affect my eating. I crave for candy and I almost never eat candies! It's all food coloring and preservatives, those little we-look-yummy-but-make-you-feel-terrible -things. No thanks. But the past couple of days I have found myself eating all sorts of sweet things, like cheese cake, hazelnut chocolate.. and lots of candies.
Well surprise surprise, that stuff only gets you more tired and unfocused. Making the distant memory of peaceful mind to linger even further away. And the more tired and stressed you get - the more your body screams for sugar, fat and fast carbs. (WHY couldn't my body scream for a green smoothie, when that is what really would benefit the situation!??!?!)
Well, some might tackle this vicious circle by cutting off all the crap at once, but I like to give it a more tender approach. So tonight I made myself some raw chocolate mousse. The goodest (yeah, it could be a word..) mousse in the world. And I'll tell you that this super stuff does not make you feel tired or sick. Just makes you a bit happier than you were before :)

Raw chocolate mousse
1 portion
1/2 avocado
1 banana
1-2 tbsp raw cocoa powder
1-2 tbsp honey or other sweetener
1 tbsp lucuma (optional)

Liquorice balls
A second try with these cute liquorice balls. First one resulted in slightly more "textured" balls, since I bravely tried my best to grind the almonds in a mortar, at the same time remembering I actually have some almond flour in the cupboard.
These are totally delicious, but next time, I think I'll add still a bit more liquorice.. one can't overdo it, right?
